Black Sesame Chiffon Cake




Recipe

Ingredients
3 egg yolk
15g sugar
30g corn oil
1/4tsp sesame oil (optional)
40g soya bean milk/fresh milk
60g cake flour
1/8tsp baking powder
12g black sesame seed powder

3 egg white
1/4tsp cream of tartar
60g sugar

Steps:
1. Preheat oven to 175C.
2. Sift flour and baking powder together, set aside.
3. Use a hand whisk mix egg yolk and sugar together.
4. Add in the oils, milk, flour and black sesame powder together.
5. Whisk until well combined.
6. Use a cake mixer and whisk the egg whites and cream of tartar till frothy.
7. Gradually add in the sugar and whisk till stiff peaks form.
8. Fold in 1/4 of the meringue into the egg yolk mixture until combined.
9. Then fold in the rest of the meringue lightly until well combined.
10.Pour batter into a 21cm tube pan.
11.Put into a preheated oven and bake for 40mins.
12.Remove from oven, invert cake onto table until completely cool.
13.Remove from pan and serve.

I bought it from a market store which sell organic food stuffs.

Both also can be used. If you worry too sweet, just reduce the sugar.

I am curious as to how you got an entire cake out of this recipe. When I compare the quantity of each ingredient from this recipe to other chiffon cake recipes I've seen, it's about 25% of those recipes. Did this turn out to be a very small cake?

I have forgotten where I found this recipe. I just remembered the original recipe used 6eggs which I half the recipe. The cake turn out well just like the others.

I made this today but the black sesame flavor was almost non-existent. I'm not sure if it's because black sesame powder in itself doesn't add much flavor to chiffon cakes or I just needed to add a lot more powder. Any suggestions?

Hi Anonymous,

You can add extra sesame powder but you have to reduce the flour or toasted the powder or add more sesame oil. You can try another recipe on Black Sesame Chiffon Cake(already in my post) which uses black sesame paste instead and has a nice strong flavor of sesame.
